蒜茸蒸大虾

材料:
500g大虾
2 块水豆腐, 切厚片
1棵青葱, 切粒
2大匙蒜茸酱
1大匙生抽, 1大匙油
做法:
1. 将虾修剪干净, 开背.
2. 豆腐排在碟上, 铺上虾, 然后淋上蒜茸酱, 放进蒸笼里大火蒸7分钟便可取出.
3. 洒上青葱粒, 然后淋上生抽和烧热的油便可. (4-5人份)
Steamed Prawns In Garlic Sauce
Ingredients:
500g big prawns
2 pieces soft bean curd, cut into thick slices
1 stalk spring onion, chopped
2 tbsp Garlic And Fermented Soya Bean Sauce
1 tbsp light soya sauce, 1 tbsp oil
Method:
1. Trim prawns, slit open the back and devein.
2. Line bean curds onto a steaming tray, top with prawns and spread with Garlic And Fermented Soya Bean Sauce. Steam at high heat for 7 minutes or until cooked.
3. Sprinkle with chopped spring onion, light soya sauce and hot oil. Serve. |

蒜香黄鳝

材料:
2条黄鳝鱼, 去骨, 切条
1粒洋葱, 切丝
2条红辣椒, 切丝
3大匙蒜茸酱, 3大匙水
做法:
1. 烧热1大匙油, 爆香洋葱和红辣椒, 加入蒜茸酱炒香.
2. 将鳝鱼和水加入, 大火炒匀煮滚便可上桌享用. (4-5人份)
Stir-Fried Yellow Eel In Garlic Sauce
Ingredients:
2 fresh water yellow eels, deboned and cut into strips
1 onion, peeled and shredded
2 red chillies, shredded
3 tbsp Garlic and Fermented Soya BEan Sauce
3 tbsp water
Method:
1. Heat up 1 tbsp oil, saute onion and red chillies until fragrant. Add
in Garlic And Fermented Soya Bean Sauce and stir-fry until aromatic.
2. Add in yellow eel, water and stir-fry until well mixed and cooked. Dish
up. (Serve: 4-5) |

滑蛋河

材料A:
1大匙麻油
600g河粉, 弄散
1大匙生抽
材料B:
1大匙油, 1小匙蒜茸
500ml水, 100g瘦肉片
200g菜心, 100g虾仁
调味料:
1大匙蚝油, 1小匙盐
少许胡椒粉和麻油
2大匙粟粉水打芡用
1粒蛋, 打散
做法:
1. 烧热1大匙麻油, 加入河粉和1大匙生抽大火炒匀及香, 用碟盛起.
2. 烧热1大匙油, 爆香蒜茸, 加入水煮滚, 下虾仁,肉片,菜心和调味料煮滚.
3. 打芡, 加入蛋液搅拌均匀, 淋在河粉上便可享用. (3-4人份)
Wat Dan Hor / Fried Kuey Teow In Creamy Egg Sauce
Ingredients A:
1 tbsp sesame oil
600g flat kuey teow
1 tbsp light soya sauce
Ingredient B:
1 tbsp oil, 1 tsp chopped garlic
500ml water, 100g sliced pork
200g mustard green/chai xin, 100g prawn meat
Seasoning:
1 tbsp oyster sauce, 1 tsp salt
dash of pepper and sesame oil
2 tbsp corn flour water, for thickening
1 egg, beaten
Method:
1. Heat up 1 tbsp sesame oil, put in flat kuey teow, light soya sauce and stir0fry at high heat until well mixed and aromatic. Dish up.
2. Heat up 1 tbsp oil and saute chopped garlic until fragrant. Add in water and bring to boil. Add in prawn meat, pork, mustard green, seasoning and bring to boil.
3. Thicken with corn flour water, add in egg and stir-well. Pour over fried kuey teow and serve hot. (Serve: 3-4) |

黑啤排骨

材料:
1kg排骨, 斩块
适量炸油
腌料:
1粒鸡蛋, 1小匙盐
1小匙糖, 1/2大匙生抽
1小匙麻油, 1大匙面粉
1大匙蛋黄粉, 2大匙粟粉
5大匙水
汁料:
1大匙油, 100ml麦芽饮料
100ml黑啤, 100ml七喜
2大匙麦芽糖, 1 小匙糖
做法:
1. 排骨加入腌料充分拌匀, 腌约3小时, 然后放进热油中炸至金黄色, 捞起沥干油份.
2. 汁料倒入镬煮2分钟至浓.
3. 将排骨倒入快速拌匀便可上碟.
Spare Ribs In Malt Sauce
Ingredients:
1kg spare ribs, cut into pieces
oil for deep-frying
Marinade:
1 egg, 1 tsp salt
1 tsp sugar, 1/2 tbsp light soya sauce
1 tsp sesame oil, 1 tbsp plain flour
1 tbsp custard powder, 2 tbsp corn flour
5 tbsp water
Sauce:
1 tbsp oil, 100ml guiness malta
100ml guiness stout, 100ml 7-up
2 tbsp malt syrup, 1 tsp sugar
Method:
1. Mix spare ribs with marinade and season for 3 hours. Deep-fry in hot oil until golden brown. Dish and drain.
2. Pour sauce into a wok and cook until thick.
3. Add in spare ribs, mix well and dish up. |

清爽菠萝蜜糖水
材料A :
2片腐竹皮,洗净,泡软,剪成小片
8 粒 红枣,去籽
4片班兰叶,打结
1500 ml水
材料B:
20粒马蹄,去皮,1切为4
180g糖
2粒蛋,打散
6颗菠萝蜜肉,切粒
做法 :
1。先将A料放入锅中煮至腐竹散开。
2。加入B料继续煮至糖溶解,打入蛋液搅拌均匀便可离火。
3。享用前,加入菠萝蜜即可。此糖水可热或当冷冻甜品享用。(4-5人份量)
注:
1。菠萝蜜不适宜煮滚,否则很快便失去其爽口的口感。
2。如果不加菠萝蜜,也可煮成一道“马蹄腐竹糖水”。
Jackfruit and Water chestnut Dessert
Ingredients A :
2 pieces bean curd skin, washed, soaked and cut into small pieces
8 red dates, seeded
4 pieces pandan leaf, knotted
1500 ml water
Ingredients B :
20 water chestnuts, peeled and cut each into 4
180g sugar
2 eggs, beaten
6 jackfruit flesh, cubed
Method :
1. Put all ingredients A into a pot and cook until dried bean curd skin
is soft.
2. Add in B and continue to cook until sugar has dissolved. Add in beaten
egg, stir well and remove from heat.
3. Add in jackfruit just before serving. Serve hot or cold as after meal
dessert. (serves 4-5 persons) |

你住那里?我这里的pasar有卖,RM12一枝。不过味道当然会比较淡罗。这次我妈也
有帮我酿,我问问她看如何酿的。 |

桂花肉饼

材料:
400g肉碎(一定要半肥瘦)
2大匙蒜茸, 3大匙马蹄碎
3大匙红萝卜碎, 1大匙鱿鱼碎
1大匙芫茜碎, 1粒蛋
调味料:
1小匙盐, 1/2小匙胡椒粉
少许麻油
汁料:
2大匙生抽, 3大匙水
1大匙炸香蒜头油
1/2小匙糖
做法:
1. 将材料用大腕盛起, 加入调味料用同一方向搅拌至起胶, 然后做成扁圆形.
2. 放进蒸笼大火蒸15分钟至熟透.
3. 烧热1大匙油, 放进肉饼煎至两面成金黄色, 盛起, 将汁料煮滚淋上便可上桌享用.
Minced Meat And Waterchestnut Patty
Ingredients:
400g minced meat (half fat and half lean meat)
2 tbsp chopped garlic
3 tbsp chopped waterchestnuts
3 tbsp chopped carrot
1 tbsp chopped dried squid
1 tbsp chopped coriander
1 egg
Seasoning:
1 tsp salt, 1/2 tsp pepper
dash of sesame oil
Sauce:
2 tbsp light soya sauce
3 tbsp water
1 tbsp fried garlic oil
1/2 tsp sugar
Method:
1. Combine all ingredients in a mixing bowl and stir in one direction until very sticky. Shape the mixture into patty.
2. Steam at high heat for 15 minutes or until cooked.
3. Heat up 1 tbsp oil, pan-fry the meat patty until both side are golden brown. Dish up. Bring all sauce to boil. Pour over meat patty and serve. |
