有料到 (2人前) Ingredients (Serves 2)
豐水梨2個 2 hosui pears
川貝5克 5 g chuan bei
雪耳1朵 1 snow fungus
無花果乾2粒 2 dried figs
南北杏10克 10 g sweet and bitter chinese almonds
冰糖50克 50 g rock sugar
清水1000毫升 1000 ml water
跟住做
雪耳以清水浸軟,去蒂,洗淨,切半備用。
川貝、無花果乾、南北杏洗淨,瀝水,備用。
川貝以攪拌機打成粉狀,備用。
豐水梨洗淨,頂部切開蓋,把梨芯挖掉。
填入川貝粉、雪耳、無花果乾及南北杏於梨中,放入燉盅內,注入清水,以慢火燉1小時,再下冰糖燉15分鐘,即成。

除豐水梨外,亦可以貢梨、水晶梨、鴨梨、黃金梨或雪梨替代。
梨子能清熱去燥,川貝則化痰潤肺。於秋冬天氣乾燥時,或呼吸系統較弱時,常飲用此甜湯有潤肺防燥之效。
Method
Soak snow fungus in clean water until tender. Trim off stem. Rinse, cut into half and set aside.
Rinse Chuan Bei, dried figs and sweet and bitter chinese almonds. Drain and set aside.
Ground Chuan Bei into powder with a blender. Set aside.
Rinse pears. Cut the top of the pear off to be a cover. Remove core of pears.
Put Chuan Bei, snow fungus, dried figs and sweet and bitter chinese almonds into pears. Put the pears into double-boiling jug. Add water into jug. Place jug in water. Simmer over low heat for 1 hour. Add rock sugar and simmer for another 15 minutes. Serve.
Cooking Tips
You can replace the Hosui Pear by Gong Pear, Nashi Pear, Ya Pear, golden pear or snow pear.
