香焖一支骨

材料:
1支加厚排骨, 约600g
2000ml水
材料A:
2大匙油, 5片姜
3瓣蒜头, 1颗青葱
1粒八角, 5cm桂皮
调味料:
2大匙豆酱, 2大匙生抽
1大匙蚝油, 1/2大匙糖
1小匙麻油, 5大匙绍兴酒
1大匙粟粉水, 打芡用
适量芫西葱
做法:
1. 烧热2大匙油, 爆香材料A, 加入水煮滚.
2. 将肉排和调味料全部加入, 煮滚转小火焖至肉排软, 即可取出上碟.
3. 将剩下的汁倒回锅煮滚打芡, 淋在肉排上, 并洒上芫西葱即可享用.
Stewed Meaty Spare Ribs With Spices
Ingredients:
1 stick meaty spare ribs, about 600g
2000ml water
Ingredients A:
2 tbsp oil, 5 slices ginger
3 pips garlic, 1 stalk spring onion
1 star anise, 5cm cinnamon stick
Seasoning:
2 tbsp fermented soya bean paste
2 tbsp light soya sauce
1tbsp oyster sauce
1/2 tbsp sugar, 1 tsp sesame oil
5 shaoxing wine
1 tbsp corn flour water, for thickening
some coriander leaves and spring onion
Method:
1. Heat up 2 tbsp oil, saute ingredients A until fragrant. Add in water
and bring to boil.
2. Add in spare ribs, seasoning and bring to boil. Lower the heat and stew
until spare ribs is tender. Dish up and arrange onto a serving platter.
3. Return the gravy for stewing spare rib into a wok and bring to boil.
Thicken with corn flour water and pour over spare ribs. Sprinkle coriander
leaves and spring onion on top and serve hot. |

香口茄子

材料:
500ml炸油,
500g茄子, 切条
2大匙虾米, 浸软, 剁碎
1大匙蒜茸
1大匙红辣椒粒
1大匙青葱粒
适量炸粉 (150g粟粉, 1大匙面粉, 1小匙盐, 少许胡椒粉拌匀)
调味料:
1大匙蚝油, 1小匙鱼露
1小匙糖, 3大匙水
做法:
1. 烧热炸油, 茄子沾上炸粉然后炸至金黄色, 捞起备用.
2. 留1大匙油在镬, 爆香虾米和蒜茸, 然后加入调味料炒匀.
3. 将炸脆的茄子,辣椒粒和青葱粒加入炒匀便可.
Deep-Fried Crispy Eggplant
Ingredients:
500ml oil for deep-frying
500g eggplant, cut into thick strips
2 tbsp dried prawns, soaked, chopped
1 tbsp chopped garlic
1 tbsp chopped red chilli
1 tbsp chopped spring onion
some seasoned flour for deep-frying:
(Mix well 150g corn flour, 1 tbsp plain flour, 1 tsp salt and dash of pepper)
Seasoning:
1 tbsp oyster sauce, 1 tsp fish sauce
1 tsp sugar, 3 tbsp water
Method:
1. Heat up oil for deep-frying, coat eggplant with seasoned flour and deep-fry in hot oil until golden brown. Dish up.
2. Leave 1 tbsp oil in wok, saute dried prawns and chopped garlic until fragrant. Add in seasoning and stir-well.
3. Add in fried eggplant, chopped red chilli, spring onion and mix well.Dish up and serve. |

泰国咖哩鱼

材料:
1条鱼, 约800g, 切块
1大匙油, 1小匙蒜茸
1大匙芫茜碎, 300ml水
香料:
2支香茅, 拍扁
2片疯柑叶, 3片南姜
调味料:
2大匙鱼露, 1大匙糖
3大匙泰式冬炎酱
2大匙辣椒糊, 3大匙酸柑汁
150ml浓椰浆
做法:
1. 烧热1大匙油, 爆香蒜茸和芫茜碎, 加入水和香料煮5分钟.
2. 加入鱼肉,调味料和椰浆煮12分钟, 即可上桌享用.
Thai Style Curry Fish
Ingredients:
1 fish, about 800g, cut into thick slices
1 tbsp oil, 1 tsp chopped garlic
1 tbsp chopped coriander leaves
300ml water
Spices:
2 stalks lemongrass, bruised
2 pieces kafir lime leaf
3 slices galangal
Seasoning:
2 tbsp fish sauce, 1 tbsp sugar
3 tbsp tom yam paste
2 tbsp chilli paste
3 tbsp lime juice
150ml thick coconut milk
Method:
1. Heat up 1 tbsp oil, saute chopped garlic and coriander leaves until fragrant. Add in water, spices and cook for 5 minutes.
2. Add in fish, seasoning, coconut milk and cook for 12 minutes. Dish up and serve hot. |

泰式香芒鸡

材料A:
2只鸡, 起骨, 适量粟粉
材料B:
3大匙芒果丝, 3大匙黄瓜思
3大匙洋葱丝, 1大匙红辣椒丝
腌料:
1粒鸡蛋, 1小匙姜汁
1小匙盐, 1/2小匙麻油
汁料:
250ml鲜橙汁, 1大匙酸梅酱
1大匙辣椒酱, 2大匙酸柑汁
2大匙糖, 1/2小匙盐
适量粟粉水打芡用
做法:
1. 先将鸡腿用腌料拌匀, 腌3小时, 然后沾上粟粉放进热油中炸至金黄色, 沥干油份, 切块.
2. 将汁料煮滚, 打少许芡汁, 然后加入材料B拌匀, 淋在鸡上即可.
Crispy Chicken With Mango Kerabu
Ingredients:
2 chicken thighs, boned
some corn flour
Ingredients B:
3 tbsp mango shreds, 3 tbsp cucumber shreds
3 tbsp onion shreds, 1 tbsp red chilli shreds
Marinade:
1 egg, 1 tsp ginger juice
1 tsp salt, 1/2 tsp sesame oil
Sauce:
250ml fresh squeezed orange juice
1 tbsp plum sauce, 1 tbsp chilli sauce
2 tbsp lime juice, 2 tbsp sugar
1/2 tsp salt
some corn flour water for thickening
Method:
1. Mix chicken thighs with marinade and season for 3 hours. Coat with corn flour and deep-fry in hot oil until golden brown. Dish up and drain. Cut into serving pieces.
2. Bring all sauce ingredients to boil, thicken with corn flour water and add in B. Mix well and pour over fried chicken. Serve hot. |

老黄瓜排骨汤

材料:
1条老黄瓜, 约300g
500g排骨, 斩块
10粒红枣, 去籽
1大匙杞子
1000ml滚水
适量盐调味
做法:
1. 老黄瓜去籽, 切厚块.
2. 排骨放进滚水中, 烫去血水, 洗净.
3. 准备1炖盅, 将全部材料放进, 加入水, 放进蒸笼大火整3小时, 取出加入适量盐调味即可享用.
Old Cucumber And Spare Rib Soup
Ingredients:
1 old cucumber, about 300g
500g spare ribs, cut into pieces
10 red dates, removed seeds
1 tbsp qi zi
1000ml boiling water
salt to taste
Method:
1. Remove seeds from old cucumber and cut into thick slices.
2. Blanch spare ribs in boiling water for a short while and clean.
3. Put all ingredients and boiling water into a double-boiling and double-boil at high heat for 3 hours. Add salt to taste. Serve hot. |

油浸鱼腩

材料:
500ml炸油
1块鱼腩, 约500g
2大匙芫茜葱
大匙青葱丝
2大匙蒜头油
汁料:
2大匙生抽, 1大匙蚝油
1小匙盐, 1/2小匙黑酱油
1小匙糖, 1小匙麻油
1棵芫茜, 200ml水
做法:
1. 汁料用镬煮滚, 转小火续煮2分钟, 盛起, 去掉芫茜
2. 烧热炸油, 放入鱼腩大火炸7分钟, 翻转续炸5分钟或至香脆, 用碟盛起.
3. 淋上煮好的汁料, 洒上芫茜葱, 淋上热葱头油便可享用.
Deep-Fried Crispy Fish With Soya Sauce
Ingredients:
500ml oil for deep-frying
1 pieces (about 500g) fish belly
2 tbsp coriander leaves
2 tbsp shredded spring onion
2 tbsp fried garlic oil
Sauce:
2 tbsp light soya sauce
1 tbsp oyster sauce
1 tsp salt, 1 tsp sugar
1 tsp sesame oil
1/2 tsp dark soya sauce
1 stalk coriander leaves
200ml water
Method:
1. Pour sauce into wok and bring to boil. Lower the heat and cook for 2 minutes. Dish up and remove coriander leaves.
2. Heat up oil for deep-frying, put in fish and deep-fry for 7 minutes. Then use medium heat and continue to fry for another 5 minutes or until cooked and crispy. Dish up.
3. Pour sauce over fried fish, sprinkle coriander leaves and spring onion on top and drizzle with fried garlic oil. Serve hot. |

材料:
瘦肉500g, 切片
300g马铃薯, 去皮, 切块
3条红萝卜, 切块
8粒葱头仔, 去皮
3粒番茄, 切块
3000ml滚水
100g黑胡椒粒
适量盐调味
做法:
将全部的材料放入锅里煲3个小时, 加入盐调味便可饮用.. |

100公鱼仔, 浸软
1大匙蒜茸
1大匙虾米, 浸软, 剁碎
100水
1大匙油
调味料:
1大匙蚝油
1/4小匙盐
1/2小匙糖
做法:
1. 烧热1大匙油, 加入公鱼仔炸至金黄色或至脆, 捞起备用.
2. 烧热油锅, 爆香蒜茸和虾米, 加入包菜大火 炒匀.
3. 续加入调味料和水拌炒至干水,便可上碟.
4. 最后洒上炸脆的公鱼仔便可享用.. |

1罐午餐肉, 切片
1粒鸡蛋
适量炸油
做法:
1. 将鸡蛋打散, 备用.
2. 烧热油锅, 将午餐肉沾上鸡蛋汁下锅煎至金黄色, 捞起沥干油份便可上碟享用..

2. 留2大匙油爆香咖哩叶, 加入鸡块和调味料大火炒至干即可.

Ingredients:

Marinade:

Nam Yee Spare Ribs
Ingredients:
1kg meaty spare ribs, cut into 5cm length
oil for deep-frying
Marinade:
1 tsp bicarbonate of soda
2 pieces name yee / fermented red bean curds
1 tsp chopped coriander leaves
1tbsp nam yee juice, 2 tbsp chopped garlic
1/2 tbsp light soya sauce, 1 tbsp shaoxing wine
1 tbsp sugar, 1 tbsp oyster sauce
1/2 tsp five spice powder, 1 tsp sesame oil
dash of chicken stock granules
2 tbsp plain flour, 6 tbsp corn flour
1 egg, 100ml water
Method:
1. Combine spare ribs with all marinade and mix well.
2. Heat up oil for deep-frying, put in spare ribs and deep-fry until golden brown and cooked. Dish and drain. Serve. |
