材料 Ingredients
蝦 6至8隻 Shrimp 6-8
鮮菇 200克 Mushroom 200g
乾葱 2粒 Shallot 2
紅辣椒醬 1茶匙 Red Chilli paste 1 tsp
紅辣椒 3隻 Red Chilli 3
南薑 3片 Galanga 3 pieces
香茅 2條 Lemongrass 2
魚露 2茶匙 Fish sauce 2 tsp
上湯 350毫升 Chicken stock 350ml
青檸(榨汁) 半個 Lime(squeeze the juice) 1/2
青檸葉 3片 Lime leaf 3 pieces
製法
1.乾葱切片。
Slices the shallot.
2.拍鬆香茅以及南薑,切段。
Crush the lemongrass and galanga. Cut into sections.
3.蝦灼熟備用。
Boil the shrimps until done and set aside.
4.上湯加入南薑及乾葱,煮滾。
Boil the chicken stock with galanga and shallot.
5.放入香茅煲三分鐘。
Add the lemongrass and boil for 3 minutes.
6.加入紅辣椒醬及紅辣椒。
Place in the red chilli paste and red chilli.
7.放入鮮菇。
Add the mushrooms.
8.隨後放入蝦。
Then add the shrimps.
9.倒入青檸汁及魚露調味。
Pour in lime juice and fish sauce for seasoning.
10.加入青檸葉,即成。
Add the lime leaves and ready to serve.
小貼士
蝦灼熟後置雪櫃冷藏一會,能令質感更佳。
To achieve better texture of the shrimps, put them in refrigerator freezing a while after boiling. |
