bake cheese cake問題[有照片]

去年我烤cheese cake時
烤好後,要倒出來時,發現蛋糕太軟太綿太濕,爛爛的
所以蛋糕的賣就失敗了,用手指都拿不起來,一拿就爛掉
你們知道是甚麼問題嗎?
我3年前用同樣的食譜做過2次,那時候都做到沒問題
我也不懂後來的這一次為甚麼會醬?
是蛋白的問題嗎?
可是我有打到起尖角哦...真的想不通阿
以下是我的食譜...
350g cream cheese, softened to room temperature
30g cake flour
40g corn starch
40g milk, room temperature
3 egg yolk
40g unsalted butter, melted and cooled to room temperature
40g sugar
a pinch of salt
lemon juice from half a lemon
3 egg white
100g sugar
Line a 7"x3" round cake pan with parchment. Preheat oven to 300F. Boil water for bain marie.
Using the paddle, beat cream cheese with mixer until smooth at medium speed
Add egg yolks one by one to cream cheese. Make sure each is totally incorporated before adding the next
Slowly drizzle in melted butter
Add sugar and beat until smooth.
Gently mix in sifted flour and corn starch. You may want to using low speed instead.
Add milk and salt and lemon juice. The batter should be runny and loose. Place aside.
With a clean mixing bowl, beat egg whites and sugar until it reaches glossy soft peak.
Lighten cream cheese mixture with one third of the egg whites. Gently fold in remaining egg whites.
Fill cake pan with batter. Place cake pan in roasting pan and fill roasting pan with boiling water until water reaches half of the height of the cake pan
Bake for 60 minutes until the surface is golden brown and knife inserted to center comes out clean.
我朋友也有做過
我們懷疑是麵粉比例好像不夠多,所以會太軟...
以免失敗
我想到把它做成cup cake..不知道可以嗎

日本棉花Cheese 面粉用量本来就是很少的。
你的食谱中的水份也是正常的。
应该是蛋白没打发吧。。。 |

乳酪蛋糕烤好后不能立即脱模,最好放进冰箱冷藏过夜,第二天再脱模,这样出来的蛋糕完成漂亮! |

蛋白用快速打大概几分钟就应该ok的,其实不用打到硬,soft peak 可以了,太硬很容易过度打发,那就很难mix了,而且可能会引起蛋糕表面裂开。加油! |

幾分鐘那麼快就可以到soft peak嗎?
為甚麼我打的時候都超慢的... |

试下我的方法
beat cream cheese till soft, add in sugar continue beat till smooth
add in egg yolk slowly, following by flour beat till smooth
add in milk and melted butter, lemon juice slowly till mix well
beat white and sugar till stif and white
clockwise fold in to the batter
do not bain marie,175c bake for 20-35 minute.
试下,是你的method错了,可能... |
