请问有人会做chicken chop吗?可不可以教教小妹?谢谢你们。。。

我的做法是这样的,希望你会喜欢咯!
鸡腿(去骨),然后用五香粉(少许),胡椒粉(适量),生抽(少许)腌,
如果隔夜更入味。
要煮时,把肉沾上炸鸡粉,然后下锅炸,炸到金黄色,拿起,沥干油粉。
至于酱,我用番茄、洋葱、辣椒酱、番茄酱,煮的,若要比较辣,不就放多些辣椒酱咯!
若喜欢青豆,可以加入,这样就有青又有红咯!
我男朋友也喜欢吃咧· |

Chicken Chop
Portions: 30
Ingredients:
5400 g
chicken–without bone- (thigh-and-drumstick areas)
6000 ml
oil
1000g
breadcrumb
800 g
flour
7 no
egg (mixed with 3½ cup water and stirred)
Salt and pepper to taste
Procedures (chicken):
1) Season the chicken with salt and pepper.
2) Then pass the chicken through the standard breadingprocedure.
3) Deep fry until golden brown.
Ingredients (mushroomsauce (Yield: 2058ml) :
2016.8 ml
demi-glace
345.74 g
cannedbutton mushroom (thinly sliced)
86.44 g
butter
115.25 ml
dairywhip cream
Salt and white pepper to taste
Procedures (mushroomsauce):
1) Saute the sliced mushroom with butter.
2) Then add in the demi-glace and simmer.
3) Add in the whip cream and season with salt and pepper.
Ingredients (SautéedVegetables):
1050 g
carrots (cutinto batonnet)
1050 g
French beans(cut into 3 cm length)
1050g
cauliflower(make into florets)
450 g
clarifiedbutter
300 g
granulatedsugar
30 nos
garlic(chopped)
Salt and white pepper to taste
15 L
water
Procedures (sautéedvegetable):
1) Blanch the carrots, broccoli and cauliflower separately.
2) Then immediately refresh them in separate ice bath.
3) Saute the broccoli and cauliflower by using the garlicand season it with the salt and white pepper.
4) Saute the carrots and season them with the granulatedsugar.
*The carrots should be blanched using the cold waterblanching-technique (this is because carrots are considered as root vegetable)
Ingredients (Baked Jacketed Potatoes):
30 nos
potatoes(large size=130g/sebiji)
9 tsp
butter
Salt and white pepper powder to taste
90 cm
aluminumfoil
Ingredients(garnish):
10 pc
springonion (sliced thinly)
Ingredients (Stirtogether until thickens (Baked Jacketed Potatoes)).
300 ml
whipcream (dairy cream)
3½ no
lime (squeeze the juice)
Procedures:
1) Scrub and clean the potatoes well under running water.
2) Rub the potatoes with the butter, salt and white pepper.
3) Wrap well with the aluminum foil.
4) Bake inside an oven (180°C) for 50 to 60 minutes.
5) To serve, garnish with the chives. |
